My extended family loves to get together and eat. We congregate at someone’s house for just about every main holiday and everyone brings a dish. I am not allowed to venture outside one dish that I have been bringing for years. That dish is the easiest cheesy hashbrown casserole ever!
Until now, my family must have thought that I slaved in the kitchen for hours preparing a dish from scratch that included a multitude of spices, hand shaved hashbrown and dairy products from the cows in the backyard of my suburban home. And if I offered to bring let’s say a pie instead, I would be showered with guilt by family members saying “but the only time I ever get your cheesy hashbrown casserole is when we get together!” So if I decide to bring something else, it is ok as long as I bring the casserole as well.
Honestly, this dish is super easy and essentially it’s only four ingredients. Better yet, all you do is mix them together, spread the mixture in a pan and cook it in the oven. I know there a thousand recipes for cheesy hashbrown casserole, but this one is as easy as it gets.
Now the secret is out and I am sharing it with the world and you can now be a hero to your family just like me.
So here is the recipe for the easiest cheesy hashbrown casserole ever!
Here’s what you will need:
- 30 oz. hashbrowns
- 16 oz. of sour cream
- 1 can of cream of chicken soup
- 16 oz. of shredded cheddar cheese (more if you want it cheesier)
Preheat the oven to 350 degrees.
Mix everything thoroughly in a large bowl.
Spread the mixture out into a 13″ x 9″ baking pan.
Bake for about 30 minutes or until the top starts to become brown on the edges.
Now, how easy is that?
There are so many possibilities with this dish. You can add butter, salt and pepper, but it’s still good without it. You can add crushed corn flakes for a topping, or sausage and eggs that turn it into a breakfast casserole. It’s so versatile.
